We are great fans of Dr Seuss and love love love Green Eggs and Ham. Inspired by this book, I have cooked green crepes (Spinach and Ricotta crepes) before and keep thinking of having more... You can call us Sam-I-am as we simply love green eggs and ham.

The "green eggs" that we were cooking this time uses homemade pesto. My son enjoy processing the pesto with me, thinking that we are making delicious slime! - LOL! He had a taste of our pesto and spat all out immediately but strangely like it again as we mixed a generous amount into our "green eggs" mixture.

We made double amount of this recipe and all were gone quickly...

Here are the recipes
(with my notes and modification in blue)

Green Eggs and Ham from the book, Nigella Express or here at Nigella.com

75g pesto
(1/4 cup homemade pesto adapted from taste.com.au, please see below)
1 medium egg
75g plain flour
150ml semi-skimmed milk
(I used regular milk)
1 splash of oil for frying
5 slices hams

Blend or whisk together the pesto, egg, flour and milk to make a batter.
 

Oil a crepe pan or heavy-based frying pan, wiping away any excess oil with some kitchen paper, and place over a medium heat.
 

Ladle in approximately 100ml of batter, swirling instantly to gain a paper-thin crepe.
 

Once the top becomes dry and the edges lift away, flick it over with a thin rubber or wooden spatula to cook the other side for about 30 secs.
 

Layer the pancakes between pieces of baking parchment or greaseproof paper as you go, and when you have finished making them, lay a slice of ham on each one and roll up or fold into triangles - or however you like!

Note: Using double amount of this recipe and 26cm frying pan, we have made 8 "green eggs". 

We like to eat our green eggs and ham with Saganaki cheese! It is pan fried Greek cheese, salty and very yummy!

Saganaki cheese for the 3 mice - you must have known now who are the mouse in our house. LOL!

Rocket and Macadamia Pesto mostly adapted from taste.com.au
 

To make one small jar (about 1 1/4 cup), I have used approximately half amount of the original recipe and this are what I used:

100g salad rocket, ends trimmed 
1/2 cup fresh basil leaves
40g macadamia nuts, unsalted and roasted at 170°C fan forced for 8 mins

2 garlic cloves, coarsely chopped
80ml olive oil
1/2 cup grated parmesan

fresh lemon juice from half a lemon

Process rocket, basil, macadamias and garlic in the bowl of a food processor until finely chopped. With the motor running, gradually add the oil in a thin, steady stream until well combined.
Pulse in parmesan and lemon juice. Taste and season with salt and pepper.
