Roasted Apples with Honey Nut Crumble (Curtis Stone)

At this moment, I asked myself too what is my future and the only thing I know is that July 2013 has ending well for my baking and blogging...
Happy ending?
I remember watching the video featuring Curtis Stone and the Aussie Olympian James Magnussen cooking this dessert, roasted apples with honey nut crumble and yogurt at July last year during the London 2012 Olympic season. As I was browsing through Curtis Stone recipes, this recipe caught my attention again. Every ingredient in this recipe looks awesome... Clearly, this is kind of "happy ending" that we are after right now...
Here's the recipe from Coles website
(with my modification in blue)
Honey Nut Crumble:
20g unsalted butter
1 tbsp honey
1/4 tsp ground cinnamon
1/8 tsp ground clove
(I didn't add this)
1/4 tsp ground nutmeg
(I didn't add this)
1/3 cup pecans, lightly crushed
(replaced with walnuts)
1/3 cup flaked almonds
1 tbsp sunflower seed
(I didn't add this)
1 tsp orange zest
Roasted Apples:
4 small Gala apples, cut in half lengthways, cored (with a melon baller)
1/2 cup (firmly-packed) brown sugar
1 1/2 cups orange juice
1 tsp lemon juice
1 cup Greek yoghurt, to serve
(I used regular yogurt)
For the Honey Nut Crumble: Preheat oven to 180°C or 160˚C fan. Line a baking tray with baking paper.
In a small saucepan, melt butter over medium heat then add honey and spices. Bring to a simmer then turn off heat and set aside.
In medium bowl, toss pecans (walnuts), almonds, seeds (I didn't add this) and zest together. Pour butter mixture over and toss well to coat.
Pour nut mixture onto prepared baking tray and spread to a thin layer. Bake for 10 mins, checking halfway through, stirring occasionally until mixture is golden. Cool completely.
For the Roasted Apples: Increase oven temperature to 200°C or 180°C fan.
Place apples, cut side up, in a large baking dish. Sprinkle brown sugar over apples and pour orange juice and lemon juice into the dish.
Bake for 30-35 mins until apples are tender and slightly caramelised.
To Serve: Divide apple halves among 4 dessert plates.
Top each with a large spoonful of yoghurt then drizzle with syrup and sprinkle with honey nut crumble. Serve immediately.
Tip: If you prefer a thicker syrup, remove the apples and pour the juice into a small saucepan and simmer for a couple of minutes until thickened - I didn't do that
Note: Half of the recipe is enough to serve 2 adults and 1 kid.
