Dry Fruits Pulao

Serves 4 People
Ingredients for Dry Fruits Pulao
4 cups of Rice
4 cups of Water
2 tbsp Ghee
8 Cloves
3 Cinnamon
4 Cardamom
100 grams Cashew nuts
100 grams Raisins (Kishmish)
2 Bay Leaves
Salt to taste
How to make Dry Fruits Pulao
We are first going to wash the rice and the keep it aside. I have used small grain rice. You can use Basmati rice for making this recipe. While using Basmati rice you should soak the rice for an hour.
Now boil the 4 cups of water by adding some cloves to it. This will enhance the aroma of the rice.
Once the water boils add the washed rice into the boiling water.
Cook the rice just the accurate, it should not be too soft and keep monitoring.
Once the rice is cooked strain the rice and place it in a big surface under a running fan to dry the rice and throw away the water in which we have boiled the rice.
Now add the ghee in a deep vessel. I have used 4 tbsps of Ghee, if you want to reduce the quantity of ghee you can do so according to your need.
Now add the cashew nuts and raisins into the ghee and just fry for a minute. Remove the cashew nuts and raisins from the ghee and keep it aside.
Add the cardamoms, remaining cloves, cinnamon and bay leaves and sauté. A lovely aroma of all this spices will come out once you start frying them.
Now add the cooked rice into the ghee where we have sauted the spices.
Stir the rice so that the ghee is well mixed with rice, add some salt here to the rice and stir well again.
Now add the fried cashew nuts and raisins, you can still keep some separately for garnishing your dish.
Saute everything together so that the cashew nuts and the raisins are all mixed well with the rice.
Our mouth smacking Dry Fruits Pulao is now ready. Transfer it to the serving bowl, garnish it with the fried cashew nuts and raisins and serve it.
