Egg And Potato Curry
This curry is prepared by combining egg and potato and various spices. We are frying the egg and the potatoes before adding them to the curry because it makes the curry more flavorful. I often prepare this curry and savor it with rice, you can savor this with roti too. If you want your curry to be a little spicy or plain you can adjust the red chili powder according to your taste. Serves 5 People
Ingredients for Egg And Potato Curry
10 Eggs
8 Potatoes
3 Onions
2 Tomatoes
2 Bay Leaves
1 tsp Garam Masala Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Red Chili Powder
1 tsp Turmeric Powder
8 cloves of Garlic
1 inch Ginger
½ cup Mustard Oil
2 cups Water
Salt to taste
How to make Egg And Potato Curry
Take the eggs now and boil them. It should be hard boiled.
Once the eggs are boiled, cool them and remove the shell and keep the eggs aside.
Add a pinch of turmeric powder and apply it properly all around the eggs. We are applying turmeric powder to the boiled eggs to enhance the look of the eggs.
Now take the potatoes and peel them, wash them properly and cut them into half or one potato into four pieces and keep it aside.
Take the onions, ginger and garlic, peel them all and then grind them together into a paste.
Cut the tomatoes into small pieces or chop them and keep them ready.
Now heat the mustard oil in a kadhai.
When the oil is heated, fry the turmeric coated boiled eggs little by little. Fry the eggs in low flame or else it will start crackling.
Once the eggs are fried well, remove it in a separate bowl.
After all the eggs are fried, now take the potatoes and fry them little at the time.
Fry the potatoes on high flame till they turn golden brown in color.
When the potatoes are fried well, remove them from the oil and keep it aside.
You can also keep the fried eggs and potatoes separately in the same bowl.
Now add the onion, ginger and garlic paste along with the bay leaves.
Add the coriander powder, cumin powder and red chili powder.
Now add the turmeric powder into the curry.
Add the garam masala powder now.
Now we are going to add the most important ingredient and that is salt.
Mix everything together and cook till the raw smell of the spices disappears.
Now add the chopped tomatoes and if you like tomatoes then you can increase the quantity of the tomatoes.
Cook till the tomatoes get dissolved properly.
Now add the fried potatoes to the spices.
Stir the potatoes with the spices till the potatoes are coated well with the spices.
Now add the water as the potatoes need to get cooked.
Cover and bring the curry to boil and then when the potatoes are cooked well open the lid and stir the curry.
Add the eggs now to the recipe.
Stir and mix everything properly and let the curry simmer for two minutes.
