Mixed Vegetable Khichdi
This nutritious recipe has all the goodness of the vegetables like carrots, french beans and green peas. Apart from being nutritious it also looks very colorful. I often make this Khichdi and sprinkle little ghee on top and just relish it without any side dish with it. I prepare cooking this when I have less time at hand and I want something nice and healthy. As you can see in the ingredients that I have added a pinch of sugar, I know many of you might be wondering why I added sugar, actually I add a pinch of sugar to most of the dishes that I prepare as I feel it enhances the taste of the recipe. Serves 4 People
Ingredients for Mixed Vegetable Khichdi
2 cup Rice (small grain preferred)
1 cup Masoor Dal (red lentils)
1 cup Moong Dal (green gram)
2 Carrots
250 grams French Beans
250 grams Green Peas
2 Onions
2 Dried Red Chilies
2 big Tomatoes (cut into pieces)
1 tsp Turmeric Powder
2 tbsp Mustard oil
5 cups of Water
Salt to taste
Pinch of Sugar (Optional)
How to make Mixed Vegetable Khichdi
First we will cut the vegetables, so take the carrots, peel them and cut them in cube shape. Take the french beans and cut them into one inch lengthwise size and remove the peas from the pods. Wash and keep these vegetables ready.
Take the onions and slice them and keep the dried red chilies aside with it.
Wash rice and both the dals, the masoor dal and the moong dal together and mix them properly. Wash them well and throw away the water.
It is time to start cooking now, so heat oil in a deep bottom vessel.
Now take the sliced onions and dried red chilies and add it to the heated oil.
Now sauté the onion slices and the dried red chilies into the hot oil till the onion turns pinkish in color.
Add the vegetables, the carrots, french beans and peas to the sauted onions in the vessel.
Now stir fry all the vegetables in the vessel along with the onions for 10 minutes. This frying of vegetables enhances the taste of the vegetables.
Add the rice and dal mixture now into the vessel.
Now stir the rice and dal mixture along with all the vegetables for 5 minutes.
Add the turmeric powder now. I have added 1 tsp of turmeric powder, as I love its flavor but you can add it according to your taste.
Now add salt too at this moment.
Add the pinch of sugar now, this is optional. I often add a pinch of sugar to some of my recipes as it enhances the taste of the dish.
Now add the tomatoes to the recipe.
Stir everything well together.
Add sufficient water to the recipe. The consistency of the khichdi will completely depend on the water that we are adding now.
Boil and cook the khichdi till the vegetables are cooked well and the recipe is well prepared.
Healthy Mixed Vegetable Khichdi is now ready.
