APPLE CRUMB CAKE
Ingredients
For Cupcakes:
1 egg
1 cup unsweetened applesauce
1/2 cup sugar
1/4 cup canola or grapeseed oil
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 cup diced apple
For Crumble Topping:
1/4 cup old-fashioned rolled oats
1/4 cup brown sugar
1/4 cup whole wheat flour
1/8 tsp ground cinnamon
2 T butter, melted
Directions
Preheat the oven to 350 degrees. Grease a 12-cup muffin tin and set aside.
In a mixing bowl, combine egg, applesauce, sugar, oil and vanilla and whisk well. Whisk in baking soda and cinnamon. Stir in flours until just combined. Fold in diced apple. Divide batter evenly between muffin cups.
To make crumble, combine oats, brown sugar, flour and ground cinnamon in a small bowl and stir well. Drizzle melted butter on top and stir until well combined. Toss topping with your fingers to make sure butter is evenly distributed and mixture is evenly crumbly. Sprinkle on top of batter. Bake for 15-18 minutes, or until a toothpick comes out clean when inserted in the middle. Let cool in muffin tin on a rack for 10 minutes. Remove from tin to continue cooling. Enjoy!
