Easy Maple Pear Cranberry Oat Crumble Yogurt

All thanks to my awesome Whatever Fruit Oat Crumble Yogurt recipe... I have used this very versatile recipe to re-create another variety of oat crumble yogurt with Beurré Bosc pears, dried cranberries and maple syrup. It's so simple and yet so delicious...

Although I have made a few varieties of oat crumble yogurt before, my son said that he likes this pear crumble the most. My husband? He kept saying "Got standard" while enjoying his serve of crumble and would like me to bake of these in the future. Clearly, I can see that this crumble is delicious and of course, I can taste its deliciousness too! LOL!

Make 4-5 serves
For the crumble:
75g (1/2 cup) all purpose flour
20g old-fashioned rolled oats, not instant
50g (1/4 cup) caster sugar
1/8 tsp salt
50g unsalted butter, cold and cut into cubes

For the fruit:
3 large Beurré Bosc pears, about 500g after peeled, cored and roughly chopped into 3 cm pieces
2 tbsp dried cranberries
15g (1 1/2 tbsp) brown sugar
juice from 1/2 large lemon
1 tsp vanilla paste or extract

To serve:
unsweetened Greek yogurt, can be either low fat or regular
maple syrup

Preheat oven to 190ºC / 375ºF.

Combine flour, oat, sugar and salt in a large mixing bowl. Add butter and use a fork or your fingertips to mix and rub butter into the flour mixture until it forms coarse crumbs. Set aside but making sure the crumble mixture is still cold.

Place pear, cranberries, brown sugar, lemon juice and vanilla in one shallow baking dish with 1 liter / 2 quart capacity. Mix well to ensure that the dried cranberries is partially hydrated with the lemon juice. Sprinkle the crumble over the filling and bake for 35 mins or until the pears are tender and the top is golden and crisp. Do not over-bake pear until too marshy.

Allow crumble to cool to warm or room temperature or refrigerate if desired. Serve with yogurt and drizzles of maple syrup. Enjoy!
