Easy Mix-and-Cook Japanese Fluffy Pancakes / Hotcakes パンケーキ HIGHLY RECOMMENDED

Since young, I love kawaii things like Hello Kitty, My Melody, Kerokerokeroppi, Snoopy, Miffy and etc and even have a collection of stationary, letter sets, stickers, soft toys including hankies with these cute characters. Me using hankies? Yup. The nerdy me used to act like a grandma using hankies at school but mine are the super cute hankies! LOL!

Subsequently, my life changed as I had to head off to a completely different life priority in my twenties and thirties. And it was sad that I had to abandon my cute stuff collection.

Fortunately, my current life has been more settled and the happy me is back to collect my kawaii things again! ... but no more cute hankies! LOL!!! Instead, the cooking me is collecting more kawaii things that are relating to cooking and baking.

Recently, I have bought a couple of pancake frying pans with cute motif that can make very kawaii pancakes and my next mission is to look for a really good Japanese Pancakes / Hotcakes パンケーキ recipe...

My Beary Berry Very delicious Japanese Fluffy Pancakes / Hotcakes パンケーキ!!!

Love my beary berry very delicious Japanese pancakes?

Although these super cute pancakes are very easy to cook, I must admit that I didn't manage to cook these pancakes well enough in my first few trials.

It was actually tough looking for the right recipe at first. I started by browsing Little Miss Bento website because I had seen similar pancakes in her Instagram but couldn't find any pancake recipe from her. I could have use the instant pancake mix to cook my kawaii pancakes but no! I insisted to look further...

Then, I found this Japanese pancakes recipe at here from a famous Youtuber, Ochikeron. Although the composite of this recipe is really really really good, it doesn't explain well enough on how to cook the pancakes perfectly. I tried to follow Ochikeron's instruction initially and my pancakes turned to be a disaster! Some got stuck onto my non-stick pans and some got burnt! LOL!

Hence, I have re-written this recipe accordingly and it is now a perfect pancake recipe for me to use. So, don't buy pancake mix! It's a waste of money!!! Use this recipe!!! It is PERFECT!!! HIGHLY HIGHLY HIGHLY RECOMMENDED!!!

HIGHLY HIGHLY HIGHLY RECOMMENDED!!!

It's very easy to cook these super cute pancakes!!! Here's a video showing how I cooked these yummy fluffy pancakes and please do take note of these important pancake-cooking tips:

1) Due to the high sugar content in these pancakes, you must use non-stick frying pans to cook these pancakes.

And you must grease the frying pan (but not too much) even though the frying pans are non-stick! To do so, dip a paper towel in about 1-2 tablespoon oil and grease the pan lightly with the oily paper towel. The oil on the frying pan should not be visible.

2) Please stick to the ingredients and the amount used in the recipe. Do not reduce the amount of added sugar or your pancakes will not cook to this perfect golden colour.

3) Always preheat your frying pans and cook the pancakes with the lowest heating and the heating has to be well-distributed over the entire area of the frying pan so that the pancakes will have a uniform golden colour.

4) If you are using frying pans that have a motif or a fixed shape to cook and you reckon that flipping the pancakes is difficult for you, you can try cooking the pancakes with two frying pans. The second frying pan has to be the same size or slightly larger. Watch my video and you will see what I mean.

Here's my version of the perfect Japanese Pancakes / Hotcakes recipe that is adapted from here.

Makes about three to four medium or two 16 cm large pancakes
50g cake flour with 8% protein
5g cornflour
20g caster sugar
1 tsp baking powder
1/8 tsp salt
50ml milk
1 tsp (5ml) neutral tasting vegetable oil
1 large egg

fruits, jam, maple syrup, butter, peanut butter, Nutella or any spread to serve

Combine cake flour, cornflour, caster sugar, baking powder and salt. Set aside.

Combine milk, oil and egg in a large mixing bowl or a large measuring cup and use a fork to whisk lightly until just combined.

Sift flour mixture into the egg mixture and use the same fork to whisk until just combined. DO NOT OVER MIX!

Allow mixture to rest for about 5 mins at room temperature.

While the pancake mixture is resting, heat a non-stick frying pan over the lowest heat for not longer than 3 mins. The heating has to be well-distributed over the entire area of the frying pan. Dip a paper towel in about 1-2 tbsp oil and grease the pan lightly with the oily paper towel. Hint: The oil on the frying pan should not be visible.

Pour about 2 tbsp batter (to make medium pancakes) or about 3 1/2 tbsp (50ml) batter (to make 16 cm pancakes) or any adequate amount onto the frying pan, and cook with the lowest heat for 5-10 mins depending on the strength of the heating and the size of your pancakes or until the edges of the pancakes are set and the cooked side is golden brown. Use a spatula to loosen the edges of the pancakes so that they can be easily removed from the pan.

Flip the pancakes (or flip into another preheated greased non-stick frying pan if you are using frying pans that have a motif or a fixed shape to cook - please watch my video and read my cooking tip no. 4), then cook for another minute until both sides are golden browned. Repeat the steps to cook the rest of the pancakes.

Serve with fruits, jam, maple syrup, butter or any spread if desired.
