Egg Bhurji

Egg recipes are quite easy to prepare. This Bhurji prepared with egg is one the easiest egg recipe I have ever come across. The best thing about this bhurji is we can savor this with rice at lunch time or with roti at dinner time or with breads for breakfast. This dish that can be prepared in hardly any time can also be the mid-night hunger solution. I often prepare this recipe and pack it in my sister’s Tiffin box along with plain bread toast. I have shared the recipe of my Egg Bhurji here under.

Time for Cooking : 7 minutes
Serves 2 People

Ingredients for Egg Bhurji

4 Eggs
2 big Onions
2 Green Chilies
Salt to taste
Pinch of Turmeric Powder (Optional)
2 Tbsp Mustard Oil

How to make Egg Bhurji

To make the Egg Bhurji we will first peel the onions and then slice them. Keep them aside.



Now take the eggs and break them in a bowl together.



Add little salt to the eggs. We will add very little salt here as the rest of the salt we are going to add later while preparing the Bhurji.



Now beat the eggs together properly with the help of the fork.



Heat the mustard oil in a pan or a kadhai.



Add the sliced onions and stir just for a minute, this is only to remove the raw taste of the onions.



Now add the beaten egg slowly into the kadhai or pan on top of the onions.



Add the green chilies and salt. You can chop the green chilies and add them, I have added the whole green chilies.



Now start sauting the eggs till they scramble up completely.



Add a pinch of turmeric powder and sauté for two minutes. This is optional, I have added it because it is one of my favorite spices and I like its flavor. If you don’t like turmeric then you can drop adding the same.



Lip Smacking Egg Bhurji is now ready.
