Aloo Gobi

Aloo Gobi is a vegetarian curry, oh for all of you who do not know the English meaning of Aloo Gobi it is Cauliflower and Potato curry. I love cauliflower. I often buy them when in season as it is a seasonal vegetable but nowadays here it is available all twelve months so I enjoy this yummy and spicy curry whenever I want. While preparing this curry one should be careful and monitor it all the time as if it is over cooked the curry will become mushy and at the same time one should make sure that the potatoes are well cooked. This is the reason why we have added the potatoes before adding the cauliflower into the recipe. See here below the very palatable recipe of my Aloo Gobi.

Time for Cooking : 20 minutes
Serves 4 People 

Ingredients for Aloo Gobi

1 big Cauliflower (Gobi)
4 big Potatoes
2 Tomatoes
2 Onions
1 tsp coriander powder
1 tsp Cumin powder
1 tsp Ginger paste
1 tsp Garlic paste
1 tsp Red Chili Powder
1 tsp Turmeric powder
2 Dried Red Chilies
Pinch of Sugar
Salt to taste
4 tbsp Mustard Oil
1 cup luke warm Water
1 bunch Coriander leaves (chopped)

How to make Aloo Gobi

To prepare this delicious curry, first we are going to cut the cauliflower into florets and we will wash it properly, keep it aside.



Now we will peel the potatoes and cut each potato into four pieces and wash it and keep it aside.



Take the tomatoes and chop them, keep it separately on a separately bowl.



Now slice the onions and keep is aside.



We are now going to start cooking the delicious curry. So heat the oil in a deep bottom pan or a kadhai. I have used mustard oil and I recommend the same for cooking in your kitchen.



Now add the sliced onions and the dried red chilies into the kadhai and sauté it for 2 minutes.



Add the potatoes now. Make sure the potatoes are not too watery as we have washed them or else the oil will start crackling. So be careful.



Now sauté everything together for 5 minutes, the potatoes with the onions and dried red chilies.



Add the pastes, ginger, garlic and the powders, coriander and cumin powder and red chili powder.



Now add the turmeric powder, I just like the flavour of the turmeric powder so I add it in most of the recipes that I prepare.



Now add the salt according to your taste.



Add a pinch of sugar now, I am sure you are wondering why am I adding sugar to this recipe, it is because a pinch of sugar enhances the flavor of the recipe.



Now sauté everything together and cook for few minutes or till the potatoes are well coated with the spices.



Add the chopped tomatoes now and sauté again.



Now it is time to add the gobi, so add the gobi into the pan now.



Saute well everything for 5 minutes or till the potatoes and the cauliflower florets are well coated with the spices.



Now add a cup of luke warm water and cover and cook till the potatoes and cauliflower florets are well cooked. But keep monitoring, there should not be any over cooking.  

   

Once it is cooked remove the lid and let the curry simmer till the water dries up completely.



After the water dries up add the chopped coriander leaves now.



Our delicious Aloo Gobi is now ready to serves and savor.
